Vegetable and Beef Stuffed Red Peppers (tasteofhome.com)
Ingredients
- 6 medium sweet red peppers
- 1-pound lean ground beef (90% lean)
- 1 medium zucchini, chopped
- 1 medium yellow summer squash, chopped
- 1 medium onion, finely chopped
- 2 cups of coarsely chopped fresh spinach
- ⅓ cup of finely chopped green pepper
- 4 garlic cloves, minced
- 1can of tomato sauce
- 1 cup of ready to serve long grain and wild rice
- ¼ teaspoon of salt
- ½ cup of shredded part-skim mozzarella cheese
- 1 tablespoon of olive oil
- 3 slices of reduced-fat provolone cheese, halved
Directions
- Begin by preheating the oven to 350 degrees Fahrenheit. Cut the tops off the red peppers and discard. Make sure to also remove and discard seeds. Cook peppers in boiling water until they become crisp tender. This may take around 3-5 minutes. Drain and rinse in cold water.
- In a large skillet, cook the ground beef over medium heat until the beef is no longer pink. Make sure to break into crumbles. This will take around 6-8 minutes. Remove the beef with a slotted spoon to ensure that drippings are poured off.
- Now in the same pan, make sure to heat oil over medium heat. Now add in and sauté zucchini, onion, yellow squash, and green pepper until it becomes tender. This will take around 4-5 minutes. Add in the spinach and garlic, making sure to cook and stir until the spinach becomes wilted (about 1 minute). Stir in the cooked beef, rice, tomato sauce, mozzarella cheese, and salt.
- Place the red pepper on a greased baking sheet (about 8 inches). Fill it up with the meat mixture. Then make sure to bake, covered, until the peppers become tender (around 35-40 minutes). Top the peppers off with provolone cheese. Then bake again, uncovered, until the cheese is melted. This will take around 5 minutes. Then take out of the oven and enjoy!
