How to Make Barbecue Chicken in the Oven

 If you feel like you are running low on the meal inspiration, don’t feel down about it! It is perfectly normal to sometimes reach a point where you feel like the dinner ideas are running low. Especially during the winter season where energy is lower, and moods tend to be more down! Don’t worry though.   • When baking chicken in the oven make sure that you use an internal thermometer in order to measure the temperature and make sure that it reaches the required 165 degrees Fahrenheit threshold. This will ensure that the chicken is not pink on the inside!
  • For the best baking experience in the oven, make sure that all of the chicken pieces (thighs, tenders, breasts, wings, etc.) are all even in thickness. This will ensure that all pieces of chicken will not dry out when cooking for the same time.
  • When baking chicken, make sure to put the skin-side down on a non-stick pan in order to get it a little crispy.
  • To avoid a dried-out chicken, make sure that the chicken is covered in BBQ sauce well. So long as you cover the chicken pieces well, then the chicken shouldn’t dry out in the oven!

Ingredients

  • 4 whole boneless skinless chicken breasts (about 1 inch thick)
  • 3 tbsp of brown sugar
  • 1 tbsp Worcestershire sauce
  • ¼ cup ketchup
  • 1 tsp paprika
  • ¼ tsp garlic powder
  • ½ cup apple cider vinegar
  • ¼ cup of extra virgin olive oil
  • 1 tbsp butter melted

Directions

  1. First begin by preheating the oven to 375 degrees Fahrenheit. Lightly grease a baking dish with cooking spray.
  2. Whisk together the Worcestershire sauce, brown sugar, ketchup, paprika, garlic powder, apple cider vinegar, and extra virgin olive oil. Place each chicken in a single layer over the sauce. Pour ⅓ of the remaining sauce over the chicken. 
  3. Bake the chicken for about 20-25 minutes and make sure that it is cooked thoroughly. Top the chicken off with remaining sauce and enjoy!

BBQ Pulled Chicken

Ingredients for Barbecue Sauce

  • 1 7 ounce jar of tomato paste
  • ¾ cup of balsamic vinegar
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon Stevia or 2 tbsp of maple syrup
  • 1.5 lb boneless skinless chicken thighs

Directions

  1. Begin by preheating the oven to 300 degrees Fahrenheit. Place the chicken thighs in a square baking dish (around 8 inches). Make a few slits in the chicken with a sharp knife.
  2. Mix all of the barbecue sauce ingredients together.
  3. Pour the sauce over the chicken and be sure to coat it evenly. Use hands to ensure that the sauce covers the chickens and coats the inside of the slits as well.
  4. Cover the baking dish tightly with two layers of foil and place the chicken in the oven. Cook for about 3 hours until the chicken is very tender.
  5. Remove the pan from the oven and carefully remove the foil and allow the chicken to cool for about 5 minutes.
  6. Use a knife and fork to begin shredding the meat and toss it with the sauce.
  7. Serve pulled chicken on top of buns with coleslaw or serve with rice! Enjoy!
