Baked Honey BBQ Chicken Fingers (sallysbakingaddiction.com)

Ingredients
- 1 ½ pounds skinless, boneless chicken breasts or tenders
- ½ cup honey
- ¾ cup BBQ sauce
- ½ cup of whole wheat flavor or all-purpose flour
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- ½ teaspoon smoked paprika
- 2 large eggs
- 1 ½ cup panko
- Nonstick spray
Directions
- First begin by combining the honey and barbecue sauce in a large bowl. If you are using chicken breasts, then please pound the chicken breast and cut into strips. If you are using boneless, skinless chicken tenders then cut in half lengthwise. Add the chicken strips to the bowl and stir them to coat. Cover everything tightly and be sure to marinate the chicken in the refrigerator for about 30 minutes and up to 4-6 hours. Be sure to note that the longer the chicken sits in the marinade, then the more flavorful the chicken will be!
- Preheat the oven to 400 degrees Fahrenheit. Then proceed to line a nonstick spray over the baking sheet.
- In another dish, combine the flour, salt, pepper, and smoke paprika. Beat the eggs in another dish. Pour Panko breadcrumbs into another dish. Then proceed to coat each chicken strip in flour before shaking off any excess. After that, dip each strip in the egg mixture and allow any excess to drip off. Then proceed to roll all chicken strips into the breadcrumbs before again shaking off the excess. Place chicken strips on the baking sheet. Spray chicken strips with nonstick spray in order to seal the breading on the meat.
- Bake everything for 10 minutes and be sure to turn each piece over and continue baking the meat until the outside is crisp and the centers are thoroughly cooked. This will take about 10 minutes more. Bake longer if you prefer a dark brown color.
